NANA DOLAN’S FAMOUS OATMEAL
CHOCOLATE CHIP COOKIES


Ingredients:

1 and ½ cups flour

1 teaspoon baking soda

1 teaspoon salt

1 cup shortening

¾  cup brown sugar

¾  cup white sugar

3 eggs unbeaten

1 teaspoon hot water

2 teaspoons Mount Williams Original Vanilla Flavor

or 2 teaspoons Autumn Lane Pure Bourbon Vanilla Extract

1 cup chopped walnuts

2 cups oatmeal (quick oats or regular)

2 cups chocolate chips

Method:

Sift the flour, baking soda and salt together. Mix the shortening, sugars, eggs, hot water and vanilla together. Add walnuts, oatmeal and chocolate chips. Mix all ingredients together. Spoon out dough, and bake at 350 degrees for 10-12 minutes.

PEPERE’S JOE-LOUIS or WHOOPIE PIES

Ingredients for Cake Portion:

¾ cup shortening

2 cups sugar

2 eggs

3 cups flour

2 tablespoons baking powder

¾  cup cocoa

1 teaspoon salt

1 ½ cups milk

2 teaspoons Mount Williams Original Vanilla Flavor

or 2 teaspoons Autumn Lane Pure Bourbon Vanilla Extract

¼ teaspoon almond extract

Method:

Sift the dry ingredients together. Mix the sugar, shortening, milk, eggs and extracts together. Combine all ingredients and mix. Drop by teaspoon on an ungreased cookie sheet. Bake for 10 minutes at 400 degrees.

Ingredients for Filling:

2 tablespoons flour

½ cup milk

Pinch of salt

½ cup shortening

½ cup sugar

½ teaspoon Mount Williams Original Vanilla Flavor

or ½ teaspoon Autumn Lane Pure Bourbon Vanilla Extract

Method:

Cook the flour, milk and salt over low heat until thickened. Cool in cold water. Cream

together the shortening and sugar. Add cold paste and beat with mixture. Add vanilla and beat until creamy.

AUNT ANNE’S ICEBOX COOKIES

Ingredients:

3 cups sifted flour 

1 teaspoon baking soda

1 teaspoon cream of tartar

2 cups brown sugar 

1 cup butter 

2 eggs 

1 ½ teaspoons Mount Williams Original Vanilla Flavor
or 1 ½ teaspoons Autumn Lane Pure Bourbon Vanilla Extract

1 cup nuts (optional)

Method:

Sift the dry ingredients together.  Mix the sugar, butter, eggs and vanilla together.  Mix all ingredients together.  Using wax paper, roll the dough into a cylinder shape about 2 inches in diameter, and place in the freezer until hard or near frozen.  Remove the dough from freezer and wax paper, then slice to make flat, round cookie shapes (you can shape the cylinder any way you wish to add a special touch). 

Place shapes on floured cookie sheet and bake at 350 degrees for 10-12 minutes.

DAD’S WEEKEND BLUEBERRY PANCAKES

Ingredients:

2 ½ cups flour

5 teaspoons baking powder

6 tablespoons sugar 

1 ½ teaspoons of salt

3 eggs beaten 

1 ½ cups milk

6 tablespoons vegetable oil

1 teaspoon Mount Williams Original Vanilla Flavor

or 1 teaspoon Autumn Lane Pure Bourbon Vanilla Extract

METHOD:

Beat wet ingredients.  Add dry ingredients along with vanilla.
 Spoon on griddle. Flip when bubbles appear.

GRANDPA DOLAN’S WASHINGTON PIE

Ingredients:

1 cup sifted cake flour

1 teaspoon baking powder

½ teaspoon salt

2 eggs 

1 teaspoon Mount Williams Original Vanilla Flavor

or 1 teaspoon  Autumn Lane Pure Bourbon Vanilla Extract  

1 cup sugar 

1 tablespoon butter 

½ cup milk

METHOD:

Sift the cake flour, baking powder and salt together.  Mix the eggs and vanilla until fluffy. Add sugar gradually and beat until light and fluffy.  Mix butter and milk together and beat till fluffy. Add all ingredients together and stir. Bake for 10 minutes at 375 degrees in an 8x8x2 pan or a round pan lined with wax paper.  Reduce heat to 350 degrees for 20 minutes or until done.

Fill layers in between with jam or preserves and fresh berries.

MOM’S ORANGE JUICE EGGNOG

Ingredients:

14 ounces orange juice 

1 egg 

2 tablespoons sugar (superfine preferred)

½ teaspoon Mount Williams Original Vanilla Flavor

or ½ teaspoon Autumn Lane Pure Bourbon Vanilla Extract

METHOD:

Add all ingredients to a blender.  Blend on high for 30 seconds or more.  

Pour into a tall glass and enjoy.

COUSIN EILEEN’S CREAMY, DELICIOUS VANILLA ICE CREAM

Ingredients:

2 cups heavy cream

2 cups light cream

1 cup sugar

⅛ teaspoon salt

1 ½ teaspoons Mount Williams Original Vanilla Flavor

or 1 ½ teaspoons Autumn Lane Pure Bourbon Vanilla Extract

METHOD:

Mix ingredients together and place into ice cream maker.

THE TWINS’ SCRAMBLED EGGS (AND FRENCH TOAST)

Ingredients:

2 large eggs 

½ teaspoon sugar

Small dash salt 

⅛  cup milk 

½ teaspoon  Mount Williams Original Vanilla Flavor

or ½ teaspoon Autumn Lane Pure Bourbon Vanilla Extract

METHOD:

Cook on low, constantly swirling until light and fluffy. Use this mixture for French toast too.
